In last week's Top Chef, teams were challenged to create a meal with fewer than 500 calories. Frank's team won thanks in large part to his low-cal pizza. This has fewer than 200 calories I slice if I remember correctly from the show. It's actually very good. I used a little more sauce than called for in the recipe.
Pizza sauce
1 can 8 oz. tomato paste
6–8 pureed tomatoes (I used two cans)
1 small onion, minced
2 cloves garlic, minced
1 tablespoon oregano, finely chopped
30 tablespoons basil, finely chopped
2 oz red wine
Crust
4 whole wheat pita bread rounds
salt and pepper
1/4 cup olive oil
Suggested Toppings
2 cups of low-fat shredded mozzarella or 4-6 slices of fresh mozzarella
1 oz chicken sausage or 1/2 cup cooked chicken pieces
5-6 black olives (pitted, of course)
Roma tomatoes, thinly sliced and seasoned with salt
Preheat oven to 350 degrees F.
In a saucepan, mix your tomato paste and tomato puree over low heat. Add onion, garlic, oregano, and basil. Top with wine, cover, and simmer for 30 minutes, stirring occasionally. Allow to cool slightly and set aside.
drizzle a dash of olive oil with salt and pepper and spread evenly on pita bread.
Use sauce and topics to taste. Add toppings to taste and place in oven. Cook just until cheese is melted and crust is crisp.
