Want Corned Beef and Cabbage for St. Patrick’s Day? With a crock pot, you can have your traditional Irish meal as soon as you get home from work.
You can get this delicious meal prepped in the morning before you leave, and have a fabulous, tasty meal awaiting your return, with plenty of leftovers for Reubens later in the week
I know, it would be much simpler to head to a restaurant for St. Paddy’s Day, but homemade is not only more delicious, it is infinitely cheaper. As they say in Dublin, * "Nil aon tintean mar do thintean fein."( There is no hearth like your own hearth)

Crock Pot Corned Beef & Cabbage
2-3 pound Corned Beef, with spice packet**
1 head green Cabbage
3-4 Potatoes, peeled and chunked
4 Carrots peeled and sliced into 1 inch pieces (about the same size as potatoes)
1 large onion, cut into fourths
Place Beef on bottom of crock pot, and layer vegetables on top. Sprinkle with spice packet. Cook on low for 7-8 hours, or High for 5-6 hours.
If you choose to use a Beef Brisket to make you Corned Beef, here is the spice recipe rto “Corn” it:
**8 to 10 whole peppercorns
2 tbsp. pickling spice
2 tbsp. dill weed
