Calvin, a rare calico lobster, is thanking his lucky starfish after being saved by workers at Jasper White's Summer Shack restaurant in Cambridge, Massachusetts on Monday. According to the Lobster Institute website, only 1 in 30 million lobsters are calico colored. Clearly, Calvin is quite a find!
With beautiful bright orange and yellow spots, the lobster obviously stood out of the common reddish variation crustacean crowd and luckily caught the eye of White and other workers who were cleaning out the lobster tank.
"We happened to be cleaning the tank and I happened to be there. One of my guys said, 'Chef, look at this lobster,' and from across the room I knew it was special."
The colorful crustacean is destined for a better place than someone's stomach. Calvin, who was named by White, will live out his colorful life at the Biomes Marine Biology Center in Rhode Island.
White truly thinks he found something special in the unique calico lobster.
"We go through over 300,000 pounds of lobster a year, and I've been doing this for 40 years. I've seen a lot of lobsters, but I had never seen one like this."
Thankfully, Calvin was spared so the world can see how beautiful he is instead of just the diner who would have eaten him.
